Tonight’s dinner is quick, easy and one that the whole family will LOVE!!!

Mexican Taco Meat (inspired by the Fixate Cookbook)

Ingredients 
  • Chopped Peppers (2-3)
  • Onion (1)
  • Garlic (2 cloves)
  • Ground Turkey (2 lbs)
  • Chili Powder (1.5 tsp)
  • Oregano (1 tsp)
  • Spinach (1/2 bag)

Directions
  1. Cook chopped peppers (2-3), onion (1) and garlic (2 cloves) for about 3-4 minutes, or until tender.
  2. Remove veggies, placing them in a large bowl. 
  3. Cook 2 lbs lean ground turkey with 1.5 tsp chili powder, 1 tsp oregano and 1/2 bag spinach. 
  4. Add veggies back into pan with 1.5 cups sauce. 
  5. Cook for another 2-3 minutes. 
  6. Serve with quinoa, brown rice, small corn tortillas, or taco shells.

This Mexican Taco Meat is perfect for using for any number of Mexican dishes. I use it for tacos, burritos, enchiladas and I also serve it on its own as well. I regularly use chicken for my taco meat is my meat of choice. The thing I was struggling to urge right was the strength of flavor. chicken requires stronger flavors to carry it. This taco meat is exceptionally kid friendly in any case, if your kids are sensitive to extra flavor, take off out one or both of the peppers and use more tomato sauce than salsa.
